Baked Beets

Here's a great recipe for baked beets, thanks to Dr. Bob at DruglessDoctor.com. He says that eating a beet, and at least half an apple a day, will do great things for your liver. I can hear my liver thanking me right now! Cook these up, then use for several days, adding to salads or just eating cold right out of the bowl (what I just did). I never was a fan of beets, but these are SO good!
Preheat oven - 375 to 400 degrees. Peel 8 to 10 medium beets (I usually do less), then cut into bite-sized pieces. Place in baking dish - sprinkle with oil (rice oil, olive oil or coconut oil), balsamic vinegar and celtic sea salt. You will find that the vinegar will add sweetness to the beets. Cover the baking dish with foil. Bake for one to one-and-a-half hours. They can be refrigerated for up to a week - use daily! Enjoy!
