Baked Beets

Here's a great recipe for baked beets, thanks to Dr. Bob at DruglessDoctor.com. He says that eating a beet, and at least half an apple a day, will do great things for your liver. I can hear my liver thanking me right now! Cook these up, then use for several days, adding to salads or just eating cold right out of the bowl (what I just did). I never was a fan of beets, but these are SO good!
Preheat oven - 375 to 400 degrees. Peel 8 to 10 medium beets (I usually do less), then cut into bite-sized pieces. Place in baking dish - sprinkle with oil (rice oil, olive oil or coconut oil), balsamic vinegar and celtic sea salt. You will find that the vinegar will add sweetness to the beets. Cover the baking dish with foil. Bake for one to one-and-a-half hours. They can be refrigerated for up to a week - use daily! Enjoy!

Ninja Blender - Love it!


The Ninja. Man, I love this thing. I've been using it since April to make my morning smoothies and other things. It will cut through frozen strawberries in seconds! This week in the Target ad, they are on sale for $39. What a deal. It also comes with a food processor container. You just put the motor on top of whichever container you're using and it is powerful! I got rid of 3 other appliances after using this one. One of the best things about it is that it's easy to clean. My expensive blender is now put away in the cabinet. If this Ninja were to die today, I would go right out and buy another one. But it shows no signs of wearing out, thank goodness. When you put things in the food processor - onions for example - it takes one or two quick pulses to shred everything in the container.
My morning smoothie: 1 cup frozen strawberries, a dash of liquid stevia to sweeten, a splash of concentrated, unsweetened cranberry juice, 1 or 2 scoops of whey protein, and then cold green tea or white tea (amount to make it the consistency you like). Blend. Makes a yummy frozen smoothie. I like to eat it with a spoon. You can vary this recipe in hundreds of different ways, just experiment and enjoy!
